Shish Tawook with grilled vegetables from La Marsa

(WJBK) - This recipe for Shish Tawook (Chicken Kabob) with grilled vegetables comes from Farhan Najar, the chef at La Marsa.

MARINADE

25 lbs. of dressing
1/2 gallon olive oil
1/2 gallon garlic sauce, cruse garlic in olive oil and lemon juice, little bit of fresh jalapeno
1 1/2 C oregano
1 1/2 C sumac (the color of your meat may vary depending on the color of the sumac)
1/2 C salt
1 qt. (32oz.) lemon juice

140 pounds of chicken for 140 people

DIRECTIONS


1) Clean and cube boneless, skinless chicken breasts into 4-5 chunks
2) Marinate overnight
3) Slide 4-5 pieces onto each skewer
4) Grill at 400 degrees for 16-20 minutes (4-5 minutes per side)
5) Serve with rice or vegetables
