Good Day Cafe: ostrich burger and fries

NEW YORK (MYFOXNY) - There will be plenty of South African food and wine to go around when the 'BBQ to Braai' event takes place in New York City next month.


As a preview, Chef Hugo Uys, representing the South African Tourism Bureau, prepared a signature dish: ostrich meat burgers and fries, in the Good Day Cafe.

South African Grilled Sunny Side Up Ostrich Sliders

Ingredients:

1 medium sweet onion - diced

1 tbsp olive oil

3 cloves garlic

2.5lbs ground ostrich

1 cup fresh bread crumbs

1 jalapeño - finely chopped

2 tsp salt

1 tsp ground black pepper

½ cup tomato and sour black cherry chutney

2 tbsp Worcestershire sauce

1 egg

16 sesame seed slider buns

16 quail eggs

1 head Bibb lettuce

Directions:

Dice onion, garlic, and jalapeño; set aside

Over low heat, sauté onion in olive oil until translucent and caramelized, then add garlic to pan and cook additional minute

Let onion and garlic stand to cool down

In a large bowl, mix bread crumbs into ground ostrich with diced jalapeno, salt, pepper, chutney, Worcestershire sauce, and egg

Roll mixture into 3 oz. patties

Prepare buns by spreading additional chutney onto one side

Grill patties over medium heat until cooked to desired wellness

At the same time, heat sauté pan to medium heat and fry quail eggs; set aside until ready to assemble sliders

Assemble sliders with grilled patty, Bibb lettuce, and a sunny side up quail egg

Cape Malay Spice

Ingredients:

For the Marsala

2 tbsp coriander seeds

1 tbsp cumin seeds

1/4 tsp dried hot red pepper flakes

1 tsp turmeric

1 tsp ground ginger

1 tsp whole black peppercorns

3 cardamom pods

1/2 teaspoon whole cloves

1-inch piece of a cinnamon stick

1 tsp clove

1 tsp fennel seed

1 tsp black mustard seeds

1 tsp fenugreek seeds

4 curry leaves

For the French Fries

3 tbsp herb-infused olive oil

8 Medium size Yukon Potato's

Salt & Pepper

Preparation:

Preheat oven to 350°F

Toast coriander and cumin seeds in a shallow pan until fragrant

Combine toasted seeds with remaining ingredients into a bowl

In an electric coffee/spice grinder, grind spices, in batches, to a powder

Note, spice mixture (called masala) keeps for 6 months in an airtight container

Slide 6 unpeeled potatoes into wedges

Season with herb-infused olive oil, salt and pepper

Bake until golden brown and cooked through

While hot, toss fries with masala mixture, to taste
