Good Day Cafe: Eggs with shrimp

Scrambled Eggs with Shrimp

Serves 2

Ingredients

6 eggs , beaten

8 ruby red shrimp, shells removed and deveined, cut in half

8 sungold (or other variety) cherry tomatoes, cut in half

1.5 Tablespoons olive oil

2 teaspoon crème fraiche or sour cream

6 basil leaves

Salt to taste

Method

Add the olive oil to a non-stick pan on medium heat.

Add the eggs, stirring constantly with a rubber spatula.

When the eggs are about half-cooked (you can see the texture change and curds start to form) add the shrimp, crème fraiche, tomatoes and a pinch of salt. Continue to stir rapidly until they reach the desired texture (I like them to be very softly scrambled).

Taste for seasoning and add more salt if necessary. Divide between two bowls and garnish with torn basil leaves.
