Pork enchiladas with smoked ancho chili sauce

For the sauce

4 ancho chili peppers deseeded and charred

8 garlic cloves smashed

1 onion medium diced

3 tablespoons cumin

1 tablespoon chili powder

4 cups chicken broth

1 small can tomato paste

1 teaspoon oregano

1/2 cup vinegar

1 tablespoon of liquid smoke

Sauté garlic with 2 teaspoons oil in an 6 quart pot. Cook till lite brown. Add in onions, oregano, cumin and the peppers. Cook for about five minutes at medium heat. Stirring occasionally. Add the rest of ingredients and allow to simmer for 15 minutes. Take off the heat and pull out the ancho chili peppers. Strain through a fine mesh strainer. Discard all the other ingredients. In a blender, blend peppers and sauce together on high for thirty seconds. Keep warm


Guacamole recipe

Serves 6

3 firm ripe hass avocados

1/4 cup finely minced red onion

1 jalapeño minced

1/2 bunch cilantro chopped

1 teaspoon cumin

1 tablespoon salt

Juice of 2 limes

Place all ingredients into a bowl and mash till smooth with a little chunky texture.

Taste for seasoning


Guajillo recipe

Makes about a quart

8 big Roma tomatoes cut in half

Half of a Spanish onion sliced into 1/4 inch rings

8 garlic cloves

3-6 Guajillo chili peppers

2-4 chipotle peppers

1/4 cup lime juice

1 tablespoon cumin

2 teaspoons cracked pepper

Enough water for consistency

2 jalapeño sliced in half Optional

Char all ingredients in a sauté pan till very dark Place all ingredients into a food processor or blender.

Taste for seasoning and adjust if needed.
