Blissful Lowcountry Boil

Ingredients

4qts Water

½ cup Old Bay

½ cup Lemon Juice

1tbsp kosher salt

2 sliced shallots

8 garlic cloves

1lb Andouille sausage

1lb of New Potatoes

6 ears of corn shucked and quartered

2lb large fresh shrimp

2 tbsp vegetable oil

Instructions

In a large pot on medium heat add the oil, garlic shallots and Andouille sausage. Sauté the sausage until it starts to brown and you can see the fats starting to render out. Then deglaze the pot with the lemon juice. Add old bay and salt and then the water and bring it to a simmer. Now add in the potatoes and let them cook for about 10 minutes and then add the corn. Let the corn cook until it's tender and then add the shrimp. The shrimp will take 2-3 minutes to cook and then you're ready to serve.
