Say the word "caviar" and instantly you think of the rich and famous spending hundreds of dollars for fish eggs.
The best caviar in the world comes from sturgeon, but so many were being harvested that the species was in danger of being wiped out. So 10 years ago, Mote Marine Lab in Sarasota came up with a way to farm-raise sturgeon -- what started as project to save a species, created an international reputation for Mote Marine. Now, their farm-raised sturgeon caviar is raised all over the world.
Every part of the process is done at Mote Marine -- they raise the fish, the eggs are harvested, rinsed and strained, and then lightly salted through a process call malossol.
Chefs at premium restaurants such as the Don Cesar and the Ritz Carlton are buying and serving it, along with Michael's on East.
Mote Marine strongly believes that farming fish is the future. It saves the wild species, and there is no better example than a sturgeon -- which, because of its caviar, has to be the most expensive fish in the world, pound for pound.
