Celebrity Author, Chef, Tell How To Make Simple Yet Healthy Meals

Parents are always looking for fast and easy meals for their families- that are also healthy.

Author and celebrity chef Hope Cohen joined FOX29's Karen Hepp on the patio Tuesday morning to share some of her tips for healthy meals.

Her cookbook aims to make healthy cooking-and eating possible in the comfort of your own home!

Here is the Recipe for the salad she made for "Good Day." Try it:

Ella's Chopped Salad

This salad is a version of what I consider to be the perfect "chopped" salad.  Usually, I have all of these ingredients on hand, which makes it an easy and quick lunch or appetizer salad.   I often made it for my daughter to take to school for lunch. After being in the container in her lunch bag for a few hours, the flavors only improved.

Makes 4 servings

1 head of romaine lettuce hearts

2 large stalks of celery

2 ripe avocados

1 can hearts of palm

2 red ripe tomatoes

1 cup of chick peas (garbanzo beans) drained

1 tsp salt

Juice of 1lemon

2 tablespoons extra virgin olive oil

Salt & freshly ground black pepper to taste

Finely chopped fresh cilantro to taste (optional)

Cut the first 5 ingredients into approximately ½" pieces and place into a large mixing bowl.  The size of the pieces is not as important as having them be uniform.

Add the chickpeas and mix thoroughly with a large spoon.

Add salt, lemon juice, oil and fresh pepper to taste, mixing gently to combine.  Taste salad for salt; add cilantro (if using) and serve.

Salad can be made several hours ahead of time, reserving the romaine lettuce, cover and refrigerate.

When ready to serve, add the reserved romaine lettuce and toss well to combine.
